  • Unsealed wood is a porous surface and can be difficult to clean and sanitize.
  • Sealed wood may be non-porous but only when sealant is applied properly.
  • 21 CFR 178.38000 identifies wood preservatives that may be used on wooden surfaces intended for packaging, transporting, or holding raw produce.
  • Any damage to sealed wood makes it porous, for example at the nail or screw holes.
