Notes about the surface:
- Stainless steel is generally durable and not as easily corroded as other metals. It is made up of a combination of nickel, carbon, and chromium and, therefore, there are many types and grades. The amount of each substance varies with the grade and will determine the durability of the surface.
- Note: not all stainless steel is considered food grade.
- All food grade stainless steel surfaces will have approval from the National Science Foundation (NSF) and the American National Standards Institute (ANSI).
- Work with the manufacturer to understand the grade of your surface and the vulnerabilities it may have to different types of cleaners and sanitizers.
- Lower grade stainless steel has a slightly more rough surface and will allow biofilms to form more easily on the surface.
