We cannot support the canning of cured, brined or corned meats with the procedures for fresh meats.

We can only recommend canning meats, poultry and seafood as described in the following recipes, using the cuts and preparation steps included. The recipes included here are the only recommendations we have for meats, poultry and seafood.
